Oh hi.
I haven't made this in years, but I LOVE it--Apple Pudding! It is really more like a cake! I am not a big cake person, but seriously, this is fabulous!
1 cup shortning
2 cups sugar
2 eggs
4 cups grated apples
2 cups flour
2 tsp. baking Soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
1/2 cup nuts (optional)
Wash and core apples. Cream sugar and shortning. Add eggs and apples. Mix well, then add dry ingredients, then vanilla and nuts. Bake at 350 for 45 minutes in a 9 x 13 pan. Serve with Butter Sauce (I think it is good without, but it is extraordinarilly good with!)
Butter Sauce
1 cup sugar
1/2 cup cream or canned milk
1/2 cup butter
1/2 tsp vanilla
Simmer until disolved.
Drizzle over cake ("Apple Pudding")
